Bone Suckin’® Mini Meatloaf Recipe

Ingredients

  • Bone Suckin’ Hot Salsa, ¼ cup
  • Lean Ground Beef, 1 lb.
  • Red Sweet Pepper, ¼ cup
  • Onion, 1 small, diced
  • Carrots, ¼ cup, shredded
  • Mushrooms, ½ cup, chopped
  • Panko Breadcrumbs, ½ cup
  • Egg, 1

Instructions

  1. Combine all of the above ingredients in a mixing bowl, making sure to mix well with your hands.
  2. Before cooking food, spray a muffin tin with olive oil.
  3. Tear off a piece of the meatloaf mixture, about the size of a baseball or a little smaller and roll into a ball. This ball will be a little larger than the individual muffin tin. Stuff the ball into the muffin tin. It will look like a meat muffin; this is okay because, in cooking, the meat will shrink.
  4. Bake for 30 minutes at 350˚. Take cooked meatloaf muffins out of muffin tin and place on individual plates. Serve with a side of Bone Suckin’ Hot or Regular Salsa for dipping. Recipe serves 6.

This recipe should make about 6 mini meatloaf muffins.
